Hearty Chicken Soup Recipe

Ingredients:chicken soup

  • 1 lb boneless chicken thighs or breasts
  • 1 large onion, diced
  • 3 garlic cloves, minced
  • 2 large carrots, sliced
  • 2 celery stalks, chopped
  • 2 medium potatoes, diced
  • 1 bay leaf
  • 6 cups chicken broth
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, sautéing until translucent.
  2. Add chicken and sear until lightly browned. Add carrots, celery, and potatoes, stirring to combine.
  3. Pour in chicken broth, add bay leaf, and season with salt and pepper.
  4. Bring to a boil, then lower the heat, cover, and simmer for 25-30 minutes until vegetables are tender.
  5. Shred chicken in the pot, mix, and adjust seasoning.
  6. Serve hot with fresh parsley garnish and crusty bread on the side.
